Recipe Adopted from Pakora Poppers From Anjum’s  Eat Right for Your Body Type: The Super-Healthy Diet Inspired by  Ayurveda , by Anjum  Anand

This wonderful curry is cooked with cilantro and mint, both of which have cooling properties to balance the heat in the chicken and aid digestion. She used small chicken or poussin with the bones in, as the flavor from the bones really rounds off the sauce. If you are using normal chicken, and chicken stock instead of water. The sauce ingredients are great for all doshas(body type). Serve with spelt rotis, broiled flat breads, or basmati rice. Kapha(large frame) can serve with quinoa, or pearl barley to soak up the gravy.

Ingredients:

Ghee or vegetable oil (kapha, use half) 2 tablespoons

Onion, 1 sliced

Chicken 1 pound 10 ounce, skinned and joined

Green chilies, pierced with knife

Herb Paste

Chilantro leaves and whole stalks 21/2 ounces

Lemon juice 3 teaspoons

Mint leaves 21/2 teaspoons

Garlic 2 Fat gloves peeled

Ginger 1/4 ounce piece

Pistachios 11/2 tabelspoons

Cumin seeds 3/4 teaspoon

Ground Feenel seeds 3/4 teaspoon

Ground Coriander 1 teaspoon

Blend the paste to a fine puree, adding salt to taste and a good splash of water to bind it together.

Heat the oil in a medium nonstick pan. And the onion and cook for 8 minutes. Add the chiles (if using) and paste, stir up, season, and add water to come three-quaters of the way up the chicken.

Bring to boil, then reduce the heat, cover, and simmer, stirring occasionally, for 20 to 25 minutes, or until the chicken is cooked.

Check after 15 minutes to see if the pan needs more water. The resulting gravy should be quiet creamy. Season and serve.

Three days back, I received something that make me drool and feeling fresh. That’s not the ordinary lemons you get in the store. Thanks to Karen Morss for sending fresh and sweet lemon. Do you know drinking lemon juice reduce your weight? Drink lemon juice with a tablespoon of honey (no sugar) in every morning before breakfast & coffee. It has the effect of reducing weight and cleaning your body system. It helps you to reduce weight and constipation.

I feel soft when rolling it on the cutting board to get more juices. After squeezing the juices from the lemons, I will not throw it. Tomorrow I am going to cook mutton and so, I will use the lemon wedges to clean it on the cutting board and knife. It leaves them smelling fresh and then I will throw.

What you need:
Cooked Rice – 1 cup
Cumin seeds
Mustard seed
Turmeric powder
Red whole dry red chili
Green chili
Fresh curry leaves
Chana dal
Urad dal
Roasted peanuts
Salt
Lemons

It’s very easy to find all the above ingredients in any Indian stores. It’ll not take more time for you to cook as it’s nothing and only these seasonings to add more flavor while cooking it. You can prepare it with left over rice.

Seasoning:

• 2 tablespoons oil
• 1/2 teaspoon cumin seed
• 1/2 teaspoon mustard seed
• 1/2 teaspoon turmeric
• 2 red whole red chili
• 1 green chili sliced in four long way
• 12 to 15 fresh curry leaves
• 1 tablespoon chana dal
• 1 tablespoon urad dal
• 1/4 cup unsalted roasted peanuts
• 1 teaspoon salt adjust to taste
• 1/4 cup lemon juice

1.Heat the oil in a frying pan on medium heat; stir-fry the peanuts for about 2 minutes until peanuts changes the color to light brown not dark. You have to throw if peanuts become dark black in color.
2.Take out the peanuts from oil and use the same oil for rest of the seasoning.
3.Add mustard seeds and cumin seeds after seeds crack
4.Add red chili, curry leaves, and green chilies, and stir for a few seconds.
5.Add chana dal and urad dal, stir-fry for about a minute
6.Add turmeric and mix it well.
7.Add the cooked rice, peanuts and sprinkle salt and lemon juice over the rice.
8.Mix gently, and stir-fry for about 2 minutes. Now, Lemon Rice is ready!

The best is to serve it with any grilled chicken or fish or lamb or veggies. It has a good combination with any grilled food. It keeps you full longer than eating salad with any grilled food.

I love to relax with my family for this Valentines. How can I relax and leave our family go hungry without cooking any meal. My family loves home made food than the outside food. I bought blue saute pan when there was a big sale in iKea. It was very lightweight and non stick with its black interior coating. I used it whenever I needed it and it needs more oil to cook the food evenly. It’s already burnt on high heat and leaves the dark brown spot at the  bottom of the pan. So, I have to be very careful while using it to cook at moderate heat. I always think all pans have hot spots if we pay hundreds of dollars.

I  want to check whether Aeternum Saute Pan have the same effect of using my old blue saute pan. The answer is “NO”. I don’t have good mood to cook pasta as I have to boil the water and drop pasta in heavy pot. Then drain it in the colander. Jaihari asked me when I am going to make pasta. I will start it only whenever he wants it.
