Indian Lamb/Mutton Kurma: Mutton cooked with yogurt and spices in rich creamy gravy

Slightly adopted from Madhura’s Recipe

Preparation time : 5 mts
Cooking time : 1 hour
Serves : 4 to 6 people

Ingredients:

* 1.5 lb Lamb/Mutton
* 2 cups Yogurt or Sour Cream
* 1 tsp Fennel seeds
* Whole Garam masala (3 tbsp of black peper,  2 cinnamon stick, 3 cloves, 3 cardamon, one star anise (you can omit if  you want))
* 2 tbsp Ginger garlic paste
* 1 tbsp Coriander powder
* 2 tsp Cumin powder
* dash of nutmeg powder (Optional)
* 1 tsp ground Garam Masala
* 1 tbsp ground Red Chilli
* 1 tbsp Oil
* 1 Onion (Saute with  one tsp of oil till transparent or golden brown)
* 1 tbsp Kasoori Methi (found it in Indian Store. Use Mint leaves instead)

Water one cup

Salt to taste

Method:
1) Wash lamb pieces really well and put them in to kadhai or wok.
2) To that add yogurt, fennel seeds, whole garam masala, ginger garlic paste, coriander powder, cumin powder, nutmeg, red chill powder and mix well.
3) Add oil and cook on high heat for 5 mts.
4) Reduce the heat to medium, cover and cook for 30 mts.
5) Add fried onion, water, mix well and cook for 15 mts.
6) Add kasoori methi, mix and cook until lamb is tender.

Server hot with rice, naan, tortilla, chapati

Note:

  1. Cooking mutton in heavy bottom pan or wok takes long time to cook.  It is fast to cook in the pressure cooker.
  2. Not too  spicy  to add 1 tbsp of chili powder as it will reduce sourness from yogurt.
  3. Adding Sour cream gives delicious and creamy taste
