Three days back, I received something that make me drool and feeling fresh. That’s not the ordinary lemons you get in the store. Thanks to Karen Morss for sending fresh and sweet lemon. Do you know drinking lemon juice reduce your weight? Drink lemon juice with a tablespoon of honey (no sugar) in every morning before breakfast & coffee. It has the effect of reducing weight and cleaning your body system. It helps you to reduce weight and constipation.

I feel soft when rolling it on the cutting board to get more juices. After squeezing the juices from the lemons, I will not throw it. Tomorrow I am going to cook mutton and so, I will use the lemon wedges to clean it on the cutting board and knife. It leaves them smelling fresh and then I will throw.

What you need:
Cooked Rice – 1 cup
Cumin seeds
Mustard seed
Turmeric powder
Red whole dry red chili
Green chili
Fresh curry leaves
Chana dal
Urad dal
Roasted peanuts
Salt
Lemons

It’s very easy to find all the above ingredients in any Indian stores. It’ll not take more time for you to cook as it’s nothing and only these seasonings to add more flavor while cooking it. You can prepare it with left over rice.

Seasoning:

  • 2 tablespoons oil
  • 1/2 teaspoon cumin seed
  • 1/2 teaspoon mustard seed
  • 1/2 teaspoon turmeric
  • 2 red whole red chili
  • 1 green chili sliced in four long way
  • 12 to 15 fresh curry leaves
  • 1 tablespoon chana dal
  • 1 tablespoon urad dal
  • 1/4 cup unsalted roasted peanuts
  • 1 teaspoon salt adjust to taste
  • 1/4 cup lemon juice

1.Heat the oil in a frying pan on medium heat; stir-fry the peanuts for about 2 minutes until peanuts changes the color to light brown not dark. You have to throw if peanuts become dark black in color.
2.Take out the peanuts from oil and use the same oil for rest of the seasoning.
3.Add mustard seeds and cumin seeds after seeds crack
4.Add red chili, curry leaves, and green chilies, and stir for a few seconds.
5.Add chana dal and urad dal, stir-fry for about a minute
6.Add turmeric and mix it well.
7.Add the cooked rice, peanuts and sprinkle salt and lemon juice over the rice.
8.Mix gently, and stir-fry for about 2 minutes. Now, Lemon Rice is ready!

The best is to serve it with any grilled chicken or fish or lamb or veggies. It has a good combination with any grilled food. It keeps you full longer than eating salad with any grilled food.
