Indian Egg Curry Recipe

You can try this simple and tasty egg curry recipe if you like and you will love it.

Ingredients:
Eggs – 6 to 8
Onion – 2
Garlic – 1 tsp minced or crushed
Ginger – 1 tsp minced
Turmeric powder  – 1 tsp
Cayenne Pepper Powder – 1 tsp or to taste

SW Organic Tomato Paste – 6 oz (170 gms) (1 canned and brought it in Costco)
Water – 1 cup
Olive Oil – 1 or 2 tbsp
Salt to taste

Cooking Directions:

  1. Boil 6 eggs, remove the shell and cut them as desired or cut X on top like you cut X tomato for blanching.
  2. Heat olive oil in Xtrema 10″ Open Skillet non-stick and saute 2 large chopped onions, 1 tsp garlic and fry in till brown.
  3. Add 1 tsp ground turmeric 1 tsp Everest Egg Curry Masala, 1 tsp ground Cayenne Pepper, 1 canned tomato sauce 1 tsp chopped ginger and salt to taste. Blend well for 3 minutes.
  4. Finally add water, bring to boil and add eggs.  Let it cook over medium flame for 10 minutes and serve with plain rice or fried rice or tortillas.
